In preparation for the deprecation of `stdenv.isX`.
These shorthands are not conducive to cross-compilation because they
hide the platforms.
Darwin might get cross-compilation for which the continued usage of `stdenv.isDarwin` will get in the way
One example of why this is bad and especially affects compiler packages

There are too many files to go through manually but a treewide should
get users thinking when they see a `hostPlatform.isX` in a place where it
doesn't make sense.

Without the change parallel installs fail as:
...-binutils-2.40/bin/ld: cannot find ./.libs/libircd.so: No such file or directory
collect2: error: ld returned 1 exit status
make[4]: *** [Makefile:634: solanum] Error 1
Previously this defaulted to the default MOTD in the solanum source
tree, and I don't want my friends to laugh at me. Includes a patch to
the tests to ensure that the MOTD is actually set.
This replicates the fix done in #109705 (solanum is a fork of charybdis,
so they share fundamental logic for this).
